Apple Pecan Stuffed French Toast

Apple Filling

  • 2 Tbsp. unsalted Butter
  • 2 sweet apples, peeled and sliced
  • 1/4 Cup apple cider
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 1 Tbsp. brown sugar
  • 1/4 Cup chopped pecans

French Toast

  • 4 Slices of Texas Toast, with a pocket cut into them
  • 3 eggs
  • 1/4 Cup milk
  • 1 tsp. vanilla extract
  • 1/2 tsp. ground cinnamon


  1. In a medium sized skillet, melt butter over medium heat. Once melted, add the sliced apples. Cook the apples, stirring occasionally, until they start to soften.
  2. Add the cider, cinnamon, nutmeg and brown sugar. Cook for a few minutes more, stirring constantly, until the mixture starts to thicken.

  3. Add the pecans, mix them in thoroughly, and remove from the heat.
  4. While the apples cool, cut the pockets into the bread. Beat together eggs, milk, vanilla and cinnamon in a wide but shallow bowl.
  5. Heat an electric skillet to 350*, or spray a skillet on your stove top with cooking spray.
  6. Now, stuff the apple mixture into the pockets you made in the bread, being careful not to rip through the side.

  7. Dip the bread into the egg mixture for several seconds on each side. Then cook on your electric skillet (or stove top skillet set to medium heat) for about 3 minutes on each side.
  8. To serve, top the Stuffed French Toast with leftover apple mixture and a drizzle of real maple syrup. Enjoy!
